Instant Pot Steel Cut Oats

Makes: 4 servings

Ready in: 30 minutes

Make a creamy batch of steel cut oats without babysitting the stove.

INGREDIENTS: 

  • 1 cup steel cut oats

  • 3 cups water

  • 1 teaspoon coconut oil

  • 1 cup coconut milk

  • ½ cup chopped walnuts, almonds or pecans

  • 2 tablespoons chia or ground flaxseed

  • 2 teaspoons cinnamon

  • Fall: 2 apples, chopped, Winter: 1 pomegranate, Spring: 2 cups raspberries, Summer: 2 peaches

DIRECTIONS:

  1. Add steel cut oats and water to Instant Pot.

  2. Lightly grease above the water line to prevent the starchy water from climbing the inside of the pot.

  3. Place lid and set on high for 10 minutes.

  4. Let your Instant Pot go into warm mode for at least 10 minutes, then release the pressure.  Stir in any extra liquid, this will be quickly absorbed as the oats start to cool.

  5. Serve with warmed coconut milk, nuts, chia or ground flaxseed, cinnamon and fresh fruit.

MODIFICATIONS:

Try these other delicious combinations: cherries, almonds and flaked coconut; mango, macadamia nut and flaked coconut; banana, hazelnut and cocoa powder

Substitute nuts with sunflower seeds or pepitas
