Instant Pot Verde Chicken Soup

Ready in: 25 Minutes
How many dinners can you pull together in 25 minutes? My favorite way to serve this is with toasted and sliced cassava flour tortillas to make a tortilla soup

INGREDIENTS:

2 pounds boneless, skinless chicken thighs

16 ounces tomatillo salsa

2 cups low sodium or salt-free chicken bone broth

2 tomatoes, chopped

3 avocados, chopped
*Save time by preparing your veggies and toppings while the soup cooks.
DIRECTIONS:

Add chicken, salsa and broth to Instant Pot.

Set Instant Pot to high and cook for 10 minutes.

Release pressure.

Remove the chicken and use 2 forks to shred the chicken or chop if you prefer, then return to the soup.

Serve topped with tomatoes and avocado.
MODIFICATIONS:
Before cooking try: adding extra veggies like chopped zucchini
After cooking try: adding sliced cassava tortillas, cooked rice or cooked quinoa
Serve with: Julienned spinach, cilantro, fresh lime juice and/or hot sauce
